I have been obsessed with making paninis lately. To the point where I cook family dinner and then make myself a panini instead of eating the dinner.

We use different kinds of meats and then add different jams or sauces to give the sandwiches a little pizazz. Everyone picks their own meat and own jam/sauce and cheese. It makes dinner fun. Serve with a veggie (or chips:)) salad and some fruit for dessert and you have a super simple meal. *Spray the sandwich on both sides with a cooking spray to get it a little crisp.
